Sour Dilly Rye Bread...




Loved this recipe, my friends.. 
Thought I would share it with you all.. 

SOUR DILLY RYE BREAD.. 
2 cups white flour
2 T. instant yeast
1 cup of dill pickle juice
3/4 cups of hot water
Place in a big bowl and blend together and beat well.. 
Add.. 
2 T. olive oil 
1 T. honey
2 large eggs
1 tsp. sea salt 
1 T. dried dill weed
1 T. caraway seeds
Beat into the batter well.. 
Then add.. 
1 1/2 cups of rye flour
and enough white flour to smooth.. 
about 1 1/2 cups.. 
Pour out onto a floured board and knead for at least 5 minutes. 
Put back in bowl and cover for at least half an hour.. 
Separate into 2 loaves and let rise again ..
Heat oven to 375 degrees F.  
Bake for 40 minutes or until it sounds hollow.. 
You may brush loaves with water during baking for a crunchier crust.. 
I buttered one loaf for a soft crust after it was baked for dear hubby.. 
I like the crustier loaves myself.. 

 I found this recipe on the web and now I cannot find it again to link to.. 
I know it was a farm blog and Canadian... 
Sorry about that but I had written it down because our internet and computers have been acting up since we came back home.. 
I think we finally have it all fixed or hope so anyway... 

I found the recipe while I was on Terry's tablet and did not mark it.. 
Hope you try it out and let me know if you like it.. 

Terry loved it and put it together with smoked meats, mustard and cheese, of course but it is good just toasted, too, with honey..

The hills of Albert County....











Hello dear hearts.. 
Just a wee picture post of the hills of Albert Co.. 
I think there is a song out there that says the hills are calling me.. grin.. 
They do call to us and we are often taking drives through these hills where my grandparents lived as children and where my dear Dad rests until Jesus comes again.. 

Just a few pics to show you where we come from.. smile.. 
Albert County is famous here in N. B. not only for it's beauty but for the individuality of the folks who live there and are proud to say they were born there.. 
That includes me.. smile..

Dear hubby had a birthday today and he was so happy to wake up thinking he was a year older only to find that he was actually a year younger...

Sunny Window Dill Pickles and home again..


Good Evening everyone.. 

I am finally back here.. 
So sorry that I have been away for a bit and I have many excuses but let's just say that I am glad to be here again and hope all has been going well with you all.. 

We enjoyed our last few days at the cottage ... 

The Bay of Fundy was at it's finest the last weekend.. 

The yard sale went very well and I think that perhaps one more next year will clean the most of it out.. 

Then on Monday we returned home.. 
How sweet it is to be back even though I do not enjoy the thought of Summer coming to an end.. 

The weather here is still lovely and I have enjoyed a night or two under the stars for awhile.. 
The wind comes up and out I go and cuddle up under a cozy comforter and enjoy the wind blowing in my face for a couple of hours.. 
Then awhile later I crawl into our water bed and finish a lovely night's sleep after all that fresh air.. smile.. 

Anyway... 
The apples are red on the trees and the leaves are changing a bit.. 

The house is slowly coming to rights.. 
There is just soooo much stuff to put away.. 
Baskets of clothes, groceries, and so much more.. 
But there are other things to do, too.. 

We spent a day at the farm just mowing the lawn and catching up... 
The fall colors are setting in here, too.. 

We had a meal and enjoyed our time there.. 

We went out for another day for Terry to cut up a bit of wood and I took along some veggies to make up a couple of recipes.. 

One thing I try to make each season is Sunny Window Dill Pickles.. 



I made them there and then brought them along home to place on my sunny kitchen window... 

Here is the recipe for you.. 
SUNNY WINDOW DILL PICKLES.. 
2 1/2 qts of very fresh pickling cucumber
3 T. dill seed
3 bay leaves 
3 cloves of garlic, sliced 
dill flower heads
pinch of chili flakes, opt.. 

2 cups of water
4 cups of white wine vinegar
1/2 cup of coarse salt

Sterilize a large bottle.. 
Slice washed cucumbers into medium thick slices..
Put water, vinegar and coarse salt in a sauce pan and bring to a boil.. 
Layer the herbs and garlic between cucumber slices until the jar is full.. 
Cover with brine and seal well.. 
Place in a sunny window for a couple of weeks.. 

I hope you enjoy this recipe .. 
I noticed that there are still nice little cucumbers in the markets and this is a very simple recipe .

This is a very short post and hopefully I will get back to you soon.. 

Our internet was down for a few days and then we took a couple of day trips, yada yada yada ...  grin.. 

We are going to the cottage for a couple of days this weekend, Lord willing.. 
It takes a few times to get everything back here and close the cottage up..

Life here at the cottage...


Hello there everyone.. 
So nice to take a few minutes and catch up with you all.. 
Summer is coming to an end here in New Brunswick and you can smell  the Fall winding it's way to the East Coast of Canada.. 

You can smell it inside here at the cottage, too as we have been making lots of pickles... 
Sandwich Dills, Garlic Dills and Sweet Dills... 
So thankful to be able to get the pickling cukes that we needed for Dill.. 
Cucumbers suffered a bit in the Spring and are not as readily available as usual but we have enough for the Winter.. 
Thank you, Lord.. 

We have also had lots of lovely company... smile.. 

Some visitors making themselves here at home.. 
Dear little Keeper gals who have been a part of my life for the last several years .. 

We shared a few lovely cups of mocha and such... 

Another day and some of our company arrived in style... grin.. 

Brought us some fresh veggies and herbs, had supper and tea and then were on their way home again... 

Friday night when the girls were here one of them ran down to the beach and took this lovely photo..

We did not have a Keepers Overniter ... 
The girls just sort of ended up here at the same time.. smile.. 

Oh.. 
Of course we had some Keeper bread.. 

Kind of like these two loaves lately rather then just one loaf... 
The recipe is on the side bar and the first one there is sprinkled with garlic pepper.. 

Terry and I have been listening to and enjoying the waves.... 

So love the Bay of Fundy but we will be heading home next week for most of the time although we will be back for a couple of days each week for September... 

Hard to believe that Summer is basically over and the kids head back to school next week.. 

The tansy is ready to make some more salves... 

This past week our precious daughter had a birthday... 
Here she is at ten months old... 

And here she is a wee bit older with her much older mama... 
Where has the time gone???

Then yesterday Terry and I took a daycation.. grin.. 
I will do a little post on that next time.. 

Are you ready for school to start? 
I do not like to bid farewell to Summer... 
She just arrived and we have not had enough time together if you know what I mean... smile

We are usually blessed with wonderful and gorgeous Falls here in New Brunswick so at least we will likely have another few months of warmish weather anyway... 

So much to do when we get back home which is good.. 

I love lots of new projects and one that has me excited is that our sweet girl is coming to paint my cupboards.. 
Finally, after all these years hubby has given in and said yes... 
Oh, thank you, Lord.. 
And I think we may even paint the pine walls in the Family Room.. Here is hoping....

Anyway... 
I know that there are horrendous things going on in the world but so thankful to live in a place where life is mostly normal and God is
the stabilizer of our lives.. 

So many good things to look forward to.. 
Getting back to our own dear wee church and the sweet folks who attend there.. 
Our waterbed,. grin..
Keepers Meetings and projects.. 
A whole new repertoire of new activities to do with them.. 
More preserving and getting ready for Winter.. 
Going to the woods with Terry and taking our lunch.. 
Bible Study night.. I have so missed this...
Heading to the farm for a day or two a week.. 
Having my Mom and Step-Dad over for a meal.. 
Stopping in and seeing my sister every now and then.. 

Just the little things that we miss when we are here but there are blessings here that we will miss.. 
Mostly seeing so much of our daughter and her family... 
The Bay... 
Meeting my cousins here and there where ever we go... 
And of course, this old house... 
But life is good and I am thankful for all the blessings that the Lord has bestowed upon us.... 

Anyway, dear hearts this is all for tonight.. 
Tomorrow I am preparing for a yard sale that will be at the shop lawn on Friday and Saturday... 
Lots of junk and some pickles and jams, too.. 
Just not my dills ... grin..

Friends and Chocolate Cake and such..


Good Evening, my dears.. 
I expect you thought I was taking a trip or something as I have not posted on here for a bit but alas I have just not been very creative in the blogging department.. 
We have been enjoying our summer, mostly.. 

The weather has finally turned summerlike for the past several weeks and it has been extremely hot up home so we are blessed to be here by the Bay.. 
The temps are warm but the breeze keeps it from stifling, if you know what I mean..  

Last week we enjoyed the company of some very dear and long time friends.. 
They even brought chocolate cake and such.. 
They had their trailers over at the camp ground and dropped by most days..  
So nice to have friends who just pick up where we left off and we just kept on going.. smile..

Of course, it is pickle time and Terry and I did up 100 pounds of cucumbers... 
Lots of mustard, of course and these below are a new recipe I am trying.. 


Cumin pickles.. 
One of my all time favorite spices.. 
I think I will like them but not dear hubby.. 
Bread and Butter are more his style.. 

I also tried some Curry ones but I do not think they will be a success.. 
They all floated to the top for some reason.. Oh well..

A couple of days ago we went home as I had to go to the doctor.. 

Having a few knee problems which is the pits... 
Old age has a few negative factors, shall we say.. smile.. 

I had wanted to go home around about way so we did..

Such beautiful cottage country and lovely farms... 

While we were home we went to check out that all was well at the farm and Terry took a little walk back to the brook.. 


I tried to catch a pic of him climbing that fence but he was too fast for me.. grin.. 

Slept in our waterbed for a couple of nights and it was lovely but we headed back here to the cottage today... 


It was rainy when we started out but by the time we did a bit of shopping and such it was sunny here and much cooler then home.. 


I see our view of the bay is changing.. 

Notice the Goldenrod growing there.. 
Fall is on it's way, I guess.. 

I think this was one of the shortest summers in history since we bought the cottage 20 years ago.. 
Seems like it anyway.. 
The Spring was so rainy and cold and we were late getting here.. 
You know.. 
Yada yada yada.. 

I do love Fall but am not looking forward to Winter.. 

I was listening to a Christian radio station on my way home from the doctor's yesterday and the speaker was talking about the world and all of the nasty situations that are going on .. 
Then he said but we can wake up with JOY  in our hearts because we have Christ living there and no matter what comes or goes He remains the same.. 
It was such a lovely reminder of something that I know but I need to make a deliberate decision to start my day each morning with JOY in my heart ... 
Bad knee or not.. grin..
