Spring in Rural New Brunswick, Ca...

Good Evening my dears.. 

Welcome to the Blessed Hearth tonight.. 

Spring is such a glorious month and there is no place I would rather be then right here in good old New Brunswick.. 

You all know me.. 

I am not a traveller.. smile 

Today we were on our way to a Home Going service of a wonderful sister in the Lord and it was a beautiful drive so I thought I would take a few pics.. 

The lovely Belleisle Bay which has flooded due to the heavy rains over the weekend... 

Spied the sweet chickens...

Not very clear but they are there.. White ones.. 

Such a gorgeous bay of water.. 

Flooding as you can see but the roads were fine.. 

Grass is greener on the other side perhaps?  smile.. 

Next winter's wood.. 

I don't even want to think about it.. grin.. 

.Plenty of spring chores to do on these farms.. 

My favourite farm animal.. 

Love love sheep.. 

I am hoping one of my kids will read this and plan to put all of their money together and buy me one for Mother's Day.. 

I told Terry and he said ... no.... 

Oh well... 

I can dream.. smile.. 

Really.. 

He is lucky that I don't want one of these... 

Right?  grin.. 

Look at the horns on that thing..

There is a farm of them near Sussex.. 

A simply beautiful farm... 

I wonder what he is looking at... 

Dreams of yesterday... 

So sad when these old barns fall down... 

But still lovely...

Homemade Egg Rolls..

Hello everyone.. 

Hope all is well in your world.. 

Posting the recipe for 

Homemade Egg Roll recipe on here today.. 

Someone was wanting it and when I tried to find it on my blog I realized that I had not posted the actual recipe but just about the Keepers of the Home meeting making them.. 

So .. 

Without further ado here is the recipe thanks to my sweet 

sister-in-law who helped us make them in the beginning and is so patient as to update the recipe for me as I could not find the original.. daah!  

Homemade Egg Rolls.. 

Grate 1/2 of a large cabbage

1/2 cup of finely chopped celery

1 small onion

4 T. of soya sauce 

2 tsp. salt and pepper

1 cup of meat.. cooked hamburger, chicken or shrimp (chopped)

1 cup of cooked rice

1 can of drained bean sprouts.. 

Mix together in a large bowl and taste as to whether you prefer more salt or pepper.. 

I always add more pepper then 1 tsp.. 

please note... 

You can leave out the meat and just replace with veggies.. 

Grated carrots or mushrooms or just more of a veggie called for.. 

Fill each egg roll cover with about 1 tablespoon or filling.. 

Use a pastry brush and a whisked egg or water to coat the edges and then seal.. 

Put them on a parchment covered tray and cover with a tea towel while you cook them.. 

Fry in an electric fry pan or whatever using Mazola Oil at 375 degrees F. for a minute or two on each side until brown.. 

You will probably turn them a time or two.. 

Drain on another paper towel lined tray until cool.. 

We made around 100 egg rolls at the meeting, I think.. 

It makes quite a few... 

We freeze them in separate zip lock bags.. 

I usually freeze 6 at a time but that is up to your families' needs..  

You can buy the egg roll covers at the grocers and most of the time in the frozen department..

Weekending..

Good Evening everyone.. 

Hope you had a great weekend.. 

Spring has arrived here in the Maritimes along with all the doings that come along with it.. 

The famous Pollett River Run was on Saturday.. 

Terry and I took a drive up to the farm and spied a bit of action along the way.. smile.. 

This is a real country deal... 

You can see for yourselves Here..

Charlie found it all very entertaining.. smile.. 

The farm is greening up.. 

Another field all ploughed up and ready for Spring.. 

I checked out my herbs and there are several growing back but I lost a few, too.. 

Parsley, Lavender and I think my Lovage have not returned.. 

But I will just replant.. 

I have some growing here at home now.. 

Basil, Sage, Rosemary and such.. 

We hope to start going up for a day at a time starting this week as the house was nice and warm when we were there.. 

I am hoping Terry will paint the bedrooms and I need to clean through before we move there for the Summer.. 

Windmills.. 

Plants are growing.. 

My brother-in-law gave me 3 seeds to plant for 50 pound cabbages.. 

Just waiting... 

And my sister-in-law gave me a lovely Butternut Squash and I baked it up today..

And I used some to make a recipe I found Here..

The oldest bread in the world.. 

Lovely flat breads made with only 3 ingredients.. 

They are delicious rolled up with olive tapenade and a slice of ham.. 

My last bottle of Pico de Gallo...

Made a lovely salad dressing with half of it.. 

Pico de Gallo Salad Dressing.. 

1/2 cup of Pico de Gallo or Salsa.. 

1/4 cup of olive or Canola oil

1/4 cup of Lemon Juice

1/2 tsp. of cumin or chili powder

salt and pepper.. 

Whisk together well.. 

Yesterday we had a great day.. 

Worship service in the morning at our church in Salisbury and then last evening we went to a concert in Sussex .. 

It was awesome with such anointed singing with this young family.. 

So.. 

That is was our weekend ..

We woke up this morning to rain beating against the windows.. 

The grasses are turning green and the trees are in bud and soon the gardens will be planted.. 

Life is good ... 

 And God is good...

Thursday night post...

Hello everyone.. 

Welcome to the Blessed Hearth this evening.. 

Just a little post for you towards the end of April... 

Last week we woke up to a couple of inches of snow twice at least but it would all be gone by noon.. 

Thank heavens.. 

I hope that we are finished with it all. 

We were out to the farm the other day just to get some water and drop off some stuff.. 

Charlie was glad to be back.. smile.. 

 I took a few pics so you can see that the snow is really almost gone.. 

Still some up in the hills... 

But it won't be long and that too will be melted away.. 

The brook sounds awesome this time of year.. 

Enjoyed sitting there listening to it while Terry did his thing.. 

Just dreaming about planting and such.. 

We hope to have a much bigger garden this year... 

Then on Saturday we had a Keepers of the Home meeting.. 

We woke up to several inches of snow but the roads were bare...

We made some breakfast and a wee devotional about our Homes and thankful that the Lord holds our hands.. 

We learned to make a few cleaning products.. 

Cleaning cutting boards with a cut lemon and coarse salt.. 

Orange vinegar.. 

Lindsay showed up how to make the All Purpose Orange Household Cleaner.. 

Her Mom was visiting and shared with us how much she loved using this product at her daughter's and now she is making it.. smile.. 

So nice to have a few new visitors this time.. 

Linen Refresher in a Spray Bottle.. 

 Lavender buds and Castile Soap, Essential oils and Vitamin E capsules all came in handy.. 

Quite a collection of oils ...

Lavender Sugar Scrub..

Here is the recipe.. 

1/2 cup of sugar

1/4 cup of almond or olive oil 

1 T. dried lavender buds

15 drops of lavender essential oil.. 

Vitamin E capsule pierced and squeezed in.. 

Stir all together and store in a crock or such.. 

To use just rub some on your hands and rinse well with warm water.. 

Homemade Laundry Soap... 

Recipe 

2 1/2 cups of shredded laundry soap 

2 cups Borax 

2 cups Arm and Hammer Washing Soda

essential oil of choice and amount (optional)

Shred soap with a grater that you use only for this purpose.. 

Add the rest of the ingredients into a large bowl or pail and mix well.. 

1/4 cup per load..
