Loving Spring in my kitchen..

Hello everyone..

Just a few pics of some lovely Spring doings..
It certainly has been warm here the last few days and everything is blooming...
Apple blossoms, choke cherries, violets, and such..
The rhubarb is ready so that means one double batch of Rhubarb Muffins..
I froze 3/4 of them so that Terry and I won't eat more then we need.. smile..
This is a Harrowsmith recipe..
Apple and Rhubarb Muffins..

Then the fiddle heads are all ready for the picking if you can find them..
Our son brought us a big bag and when we went to church on Sunday another bag was given to us by a friend..
Bless them..

So on Monday I froze up about half and then the next day made the pickles...
We love them and they are lovely on a tray with cheese and such..
The recipe is on my Pinterest here...
I changed mine to dill, though..

Then of course, there is

Cream of Fiddlehead Soup..
1 cup chopped onion..
1/2 cup chopped celery
3 cloves garlic
3 sprigs thyme
1/2 cup wine
Salt and pepper
2 T. olive oil
2 T. butter
5 cups of fiddleheads..
6 cups of vegetable stock
1 cup cereal cream..
Saute onion, celery, garlic, thyme, salt and pepper in olive oil and butter over medium heat for 5 minutes..
Deglaze pan with white wine and bring to a boil.. Add fiddleheads and stock and simmer for 20 minutes..
Puree with stick blender
Add cream and garnish with lemon zest...

I halve this recipe as Terry does not like cream soups..

I found this somewhere on the web...

Terry and I had town day yesterday and on the way home we picked the violets for my salve..
They are in olive oil in the crock pot right now and hopefully I will get it made tomorrow..

Thank the dear Lord my taxes are done, too..
Finished them today just before supper.. What a relief to get them done again for another year..
Tomorrow, I also need to clean and such..
When I do taxes then that is what gets done..
The first of the week was busy but I kept the stuff on the table and worked at it when I could..
But I am too old to do everything so I did what had to be done and the house is waiting for me.. smile..

Well, dear hearts....
I am tired and going to get some rest..

Thank you so much for your visits and comments and for praying for my friend, Kendra..

Take care and God bless...

  1. Lovely photos. Not heard of fiddleheads. What are they? Soup sounds good right now. Got a tooth pulled this afternoon and need to eat something soft. Eat it with banana bread sounds good. We have had 80 degree weather today and next couple days. Back to clouds on Mon.

  2. I am just mesmerized by these lovely fiddleheads. Where are they grown and what do they taste like? I have never seen them here in NC. I also grew up eating rhubarb in Ohio and I have been having a hankering for some of my mom's strawberry-rhubarb cobbler. Your kitchen looks so warm and inviting, Faye.

  3. Now Faye, you will have to do a blog post on Fiddleheads as I have never heard of them either here in Australia. Everything seems to grow quickly for you over there once it warms up. I find it amazing as a few weeks ago you were showing us photos of the snow!

  5. Fiddleheads are a fern, aren't they? I also am wondering what they taste like! Glad your taxes are done - they are such a chore!

  6. I am afraid I have never heard of fiddleheads but I am a great fan of rhubarb, those muffins looked delightful. I have been freezing some for later in the year to make a warming crumble.

  7. Hello Dear Faye...I've heard a lot about fiddlesticks...it was what my Mother said when something went wrong...but (scratch head) darn me what on earth are fiddleheads?! Hoping your friend Kendra is not in pain and is at peace with herself. Take care...Jackie. x

  8. Joining others...Fiddleheads are unknown here. They do look like a fern, but they are edible?

  11. Fiddleheads are common here in Ontario...maybe it's a Canadian thing. :) I picked the rhubarb in our backyard and made a pie last night (it was delicious if I say so myself, lol!). I'm freezing the rest of the rhubarb and will make Strawberry Rhubarb jam when berries are ready.

Thanks for sharing another great post. Have a great weekend Faye!

  16. Faye, you've had a busy week I think. The fiddlehead soup sounds yummy. The weather has been pretty nice most days although yesterday's rain event was pretty crazy. Thankful that we weren't affected as much out here compared to Fredericton. Enjoy the weekend.

  23. Dearest Faye,
Every time I read your blog I feel as though we just had a lovely visit.
Your wonderful life with Terry is like a repeat of days I had with my beloved husband Raleigh before he passed three years ago.
Thank you for sharing, I can't tell you what it does for my soul/heart.
Your love for your God and husband are such refreshing expressions of how we are to live while walking the path God has us on.
May God grant you strength and bright hope for you and Terry.
Because HE lives I can face tomorrow.

  26. Love the sights and smells of spring around your kitchen Faye! I have very fond memories of fiddleheads as we picked them at my grandparents home when I was a child. I have never had them pickled, but have had them in soups, and sauteed. Your cream soup sounds wonderful! Continue to have a wonderful and blessed day :)

  27. Your pictures are so nice. The soup looks delicious. As far as I know, we do not have fiddleheads here either but we could and I just am not familar with them but they look like something we would really enjoy. We love things that grow in the wild. Enjoy your day and God bless.
