A Rainy Evening at the Farm....


Good Evening my dears.. 
So glad you dropped by ... 
Just a short post for you today.. 

Terry and I went up to the farm on Monday and had another nice stay.. 
It rained here in New Brunswick for a few days and it was quite cool.. 

I thought I would just post a few pics of one of those rainy evenings in the old farm house.. 

The rain was pattering against the windows and you could hear the wind around the chimney... 
But the fire was lit and the kettle was humming out in the old porch room.. 
Supper was cooking.. 
One of our favourite casseroles was in the oven.. 
Chicken and mushrooms with rice and another pot of our lovely Spring fiddleheads were simmering away.. 
Terry was reading a few farm magazines as I set the table and finished getting the meal ready.. 

My Mom was wondering why we love it up there so much but it is hard to explain.. 
I told her it was like the place calls our name and away we go.. grin.. 
It sounds rather dreary, I suppose especially in places where there is lots of sun and heat but we are having a weird Spring here.. 
Oh well... At least it is not snow.. smile.. 
And the next week is to be much warmer... 

We are enjoying the few days a week that we have been able to go to the farm.. 

Next week we shall we heading to the cottage and getting it ready for us for Summer.. 
Love the Bay of Fundy but we love the old farm place, too.. 
Next post, I will show you a bit more of our activities there.. 

Before I close I wanted to include this link for info about our fiddleheads as several were wondering about them last post.
I believe they only grow in certain parts of the world.. 
And one has to make sure that they are the proper fern or else they are poisonous..
We are happy that they are found here.. smile.

And I think I should give you the recipe for the casserole although I hoped to link to one but couldn't find any.. 

So ... 
Chicken and Rice.. 
In a frying pan with a tablespoon of oil brown as much chicken pieces as needed for your family... 
Heat oven to 350 degrees F.. 
In a casserole dish place 1 1/2 cups of raw rice on the bottom.. 
Add a chopped onion and 2 chopped stalks of celery and 1 can of drained mushroom slices, salt, pepper, 1 clove of crushed garlic and a bit of parsley... 
In a large measuring cup or bowl whisk together 1 can of cream of mushroom soup and 3 cups of chicken stock..
Pour over top of rice mixture and stir.. 
After the chicken is browned on all sides then place on top of rice.. 
Cover and bake for 1 hour or until your rice is tender.. 
Check after half an hour to make sure there is enough liquid.. 
If not then just add more chicken stock... 

This is lots for 4 people.. 
I had about half left and made this the next day with the leftovers.. 

Chicken and Rice Casserole Soup.. 
Just place the leftover casserole and chicken pieces in a pot along with the rest of the chicken broth and/or water... 
Add a chopped carrot or two, a bay leaf, chopped parsley, a bit of thyme and salt and pepper.. 
I added  a piece of lovage... 
Then I just let it simmer on the wood stove for an hour or so but you can simmer it on the stove for probably a half hour... 
A nice salad and bread and you have another meal.. 
smile..

  2. Hi Faye... Glad to hear you are spending some time at the farm. I now how much you love it there, But I totally understand how the cottage draws you also. Two different worlds but we all love them equally the same! Home is BEST, though....LOL! Nice post, Dearie!

  5. Being winter here your casserole is very timely. I am just about to go up to the shops so will purchase the ingredients I don't have.
    I love the photo's of the rain on the window and the nice cosy atmosphere inside the house.

  7. Faye, thanks for the link to the Fiddleheads. I will check them out. I have never heard of them here in Australia. I have those two recipes ready to print out so thanks heaps for them. It is cold here at the moment....well cold for us anyway...probably a heat wave for you. LOL! The weekend will be warming up though and we Aussies do like our warm weather ;-)

    I can completely understand the pull of the old farm. I owned a house and land in the country before sweet hubby chased me down and married me. He had a house in town and no interest in living in the country. Sometimes I just like to go out to the boonies, sit in the backyard and breathe the fresh air. Occasionally when he goes on a motorcycle trip, I spend a night or two in the old house. It is so refreshing and spirit lifting!

  17. Love your blue themed table setting, we have had a cooler month of May here but now that June has come the temps are starting to rise to their normal and above, so maybe it is heading your way. We have had so much rain too that we do not need to water the garden which has been very nice! Have a wonderful weekend!

  19. What a beautiful time at the farm you had.. nothing like getting away, and enjoying the peace and quiet, even if it rains! Your chicken casserole and soup sound wonderful...   20. What a blessing it is to have that lovely farm for you and Terry. I would have a hard time leaving there. It looks so cozy and I would love having a wood cook stove. I'm sure it makes the food even more tasty. Love the casserole and the soup. May just try both recipes. Have a lovely weekend.
