No-Knead Cinnamon and Raisin Bread Recipe.. Easy..



HAPPY MONDAY MORNING ...
Here we are again at the beginning of another week and going  into one of my favorite months.  Our anniversary is at the end of March....41 years... Imagine.
When we were younger and Terry's parents had celebrated their fortith one I thought that we would be years away from it and that his parents were OLD:)
Well....HELLO... here we are and past it now...
I am so thankful to God for the many years we have had together.
This past week in Psalms I was reading where we are to thank God for his KINDESS in the MORNING and to PRAISE Him for his FAITHFULNESS in the EVENING...
Did you ever notice that verse before... I probably read it often but it didn't sink in.. Anyway... I think it was in Psalms..

And so this morning I thank Him for the kindness of the many years we have had together..
I said all that to end up by giving you a recipe that is my husband's
favorite all time BREAD RECIPE.. 


NO KNEAD CINNAMON RAISIN BREAD...

1 package active dry yeast
1 1/2 cups of warm water (105 -115 degrees)
1 tsp. sugar
2 Tablespoons honey
2 Tablespoons butter
1 teaspoon salt
3 cups flour. divided

1 Tablespoon cinnamon
1 cup raisins
In a large bowl dissolve yeast in the warm water and add sugar and honey and stir.  Add butter, salt and 2 cups flour...
Beat with electric mixer on LOW until blended..

Beat on high speed  for one minute..
Stir in remaining flour with a wooden spoon.
Cover and let rise in a warm place until doubled in size...
Punch down by stirring with a heavy spoon.  Stir in raisins and cinnamon.  Spoon batter into a loaf pan.  Let rist again until batter reaches the top of the pan.. (I forgot and let it rise higher)
Bake in a preheated 350 degrees oven for forty minutes or until when tapped it sounds hollow...Cool on wire rack..
This batter bread is a wonderful treat for breakfast or in "munchkin's " lunch sack as peanut-butter-and-jelly sandwiches..
This recipe came from Alaska....
If you get a chance to try this you will find it very easy and very tasty..

Now just a quick shot up how much SNOW was outside my KITCHEN window on Friday morning...

That is the curtain at the top and than the sky and then that is SNOW... You have to see it to believe it..
Acutally, Terry shovelled snow from the roof onto the patio but the last storm doubled the height of the snow..

GREAT TO BE CANADIAN, EH?  lol..

  4. Yup it is great to be Canadian !
    The bread looks yummy.
    We got pounded with rain last night and even had a thunderstorm with it, a lot of the snow is gone and now the temp is mild and the sun is out. Come on spring ! Have a great day !

    The bread sounds so yummy, Faye- I'll bet your kitchen smelled sooo good while that was baking!
    I love that scripture you were talking about... it reminds me of the song "Great is Thy Faithfulness" (one of my favorties) where it says "morning by morning new mercies I see." Such a beautiful thought.

  18. Hi, I just tried ur recipe. I should have greased my pan so it wouldn't stick, but followed ur recipe as-is. My loaf came out very dense. Not sure if I did anything wrong. It was very easy and tastes good. Could I try this recipe with wheat flour?

  19. Also, your picture shows the top of the long shiny and brown, mine looks pale. Did you brush egg whites on top before it was fully done?

  20. Hello Haydee... I am not sure about adding whole wheat flour with this recipe but you could try it one cup at a time and then add more the next time and see how it turns out.. I am sorry I did not say to grease your pan.. Sometimes when you cook a lot you expect people to know this.. I should have remembered that not everyone would know that.. It should not be too dense.. Make sure you let it rise well.. ok?

    Also, whenever I bake bread I rub a little canola oil on the crust with a paper towel to keep the crust from being too hard..

    Thank you so much for this recipe, it is wonderful. I just finished baking it and already had some slices:) I agree with another post that it turned out pale, do you grease it at the beginning or midway through baking?

  22. Hi Peg.. No, I don't grease it until it comes out of the oven.. Perhaps you could turn your temp up 25 degrees as some ovens are not as hot. My oven is a convection one, too so it does get more hot.. Hope that works.. xo
