A rural drive and such...

Hi everyone..
So glad you dropped by..
We went for a little rural drive on the weekend and thought you might like to see how we have lost most of our snow..
Spring has sprung.. sort of.. smile..

We had a couple of days and nights of roaring like wind that just devoured the snow..
Rain, too..
The rivers are full but so far no flooding..
Thank the Lord..

I am always on the look out for livestock and chickens..
I love chickens and geese and ducks...
All of the above are in the picture but you can't see the chickens which are on the other side of the fence..

And then...

We drove past these two darlings..
How I love them..
They are shedding their winter coats..

And of course ... sheep..
I keep asking for a couple but so far it hasn't happened.. smile..
Who knows, though...

A lot of huge farms around the area..
This is rural New Brunswick..

I think I will take a few pics in the city next time we go..
We only live about half an hour from one but it is a small city compared to such cities as Toronto or Montreal...
I prefer small cities...
Do you?

The old church that Terry attended growing up...

Huge piles of wood everywhere..
This is a province rich in some natural resources and wood is one of them..
A lot of us burn wood for the Winter heat...

Then we dropped by the farm for a few hours and I made a loaf of French bread..
I used the no knead recipe but replaced the water with potato water..
It gives the bread a nice texture and has Vitamin C and potassium to aid health..

Some people freeze their potato water in ice cube trays for bread recipes and it thickens gravy or you can add to soups and stews..
I also freeze carrot water and such ...

At the beginning of each week now I make this little Jewish type salad..

Chop up tomato, cucumbers, onions, green pepper and lots of herbs.. Parsley, mint and such..
Add some olive oil and lemon juice..
Add salt and pepper when serving..

We love it with omelets, in pita bread or as a wee side salad..

Or like this..

Made a nice little lunch for us with the new bread...

This picture was taken today when we dropped by to see a couple of my young cousins who have moved to our area..

Lovely out but a bit cold..

Thank you so much for visiting here..
So glad to have you and I look forward to hearing from you, too..

This post I will try to respond to your comments and see how it goes..
OK?

God bless you sweet ladies..

  1. That was certainly a wild wind on the weekend and it's still blowing cold. Hopefully this will pass soon and we'll get some spring-like weather. I love the city you refer to as it's my hometown but it sure has changed and grown a lot since I moved away in 1975. I almost get lost. :) I enjoyed your photos of the countryside and soon it will be getting green and pretty. The salad sounds yummy. I'll have to try it. Have a blessed week Faye. xx Pam

  8. I love all your pics of food, but your salads & breads always look so beautiful as well as delicious. We had crazy wind here on Sunday as well. My property is wooded, so I try to stay inside when it's so windy, but I do have to let my "Sweet Sophie" out. She doesn't seem to mind it, but I always say a little prayer for her. She's a golden retriever & such a sweet, sensitive dog...a very good companion during the long winter evenings. I also enjoy the pics of farm animals - just beautiful.

I love drives in the country when I can be the passenger...something I miss now that my husband is gone. He was a bit like your Terry...good to me & willing to be my driver at times.

  9. Faye, Jim just walked by the computer and saw your bread and he said he would love some of that nice warm bread with butter on it...right now!!!! His mother made homemade bread all the time just like you do. The picture of your salad is so pretty with all the reds and greens. Looks yummy! Do you call them burros? We had a couple on the farm. We (or rather...my Dad had quite a few teams of horses but he also had a team of big mules and a team of donkeys. Those little burros are so cute! Love all of your pictures...especially the church that Terry went to as a boy.

I hope all is well with you. Snow and cold here. YUK!

We call them donkeys but perhaps real farmers call them burros.. Tell Jim to bring you up and I will make him a loaf of bread.. grin. xoxoxo

  10. I love coming along with you whilst you take us for a drive. You are certainly well behind us here in the UK weather wise, our country lanes have burst into colour with spring bulbs, blossom and buds on the hedgerow. I loved your idea of saving the potato water for the bread and soups, simple but effective. I am going to start saving it. Also loved the look of the side salad, looks really tasty. Take care.

  15. I did so enjoy seeing the countryside around you Faye with its farms & sweet donkeys! I like cities for a while but couldn't live in one.
You make the best bread! I'd enjoy a slice or two from the oven & butter melting in to them!
    Enjoy your week!

  16. I really enjoyed the pictures of the rural country side. I prefer living close to small cities and towns. Although, I was born and raised about 50 miles north of Chicago in a small town close to the Wisconsin border. It was perfect. My husband was born and lived in Chicago til about 14 yrs old before his family moved out to the suburbs, but he loves the big city and would enjoy living there again. Not me. I love farms, creeks and rivers, and little towns. I don't think I have used potato water in anything but might think twice now.

  21. I had no idea you could use potato water like that! I know people save vegetable water to use for soup bases and such, but not potato. That is my what I learned today! Lovely to go on the drive with you, I do like seeing new places and exploring different parts of the world in this way!! Thank you for taking us along and for teaching me something new! xx

  22. We too have been having heavy winds and the spring has been on the cooler side but we have had a few nice days of warmer weather, but that wind is still chilly and cuts right through. I too love smaller towns, I feel calmer, when I go to the big cities things are too rushed for me, can be a tad overwhelming.

  23. Hello dear Faye! Still playing catch up after my old computer died, and Google locked me out of my blog. I have started a new one, but it's not set up right yet, I used to enjoy the simple blog before all the bells and whistles came along. Still shouldering on though!

I so enjoyed your post, all the scenery, the animals and the journey.
I have had potato bread, but not saved the water as you suggested, it sounds a treat! I'll have to give it a go. I have been making yeast rolls practicing on them, not loaf bread recently. It has improved my skills, yes, they needed improvement! I should go back to your no knead and practice some more. I use my bread machine to knead, on the dough cycle, the bake in the oven after a 2nd rise.

My first grand is here, 4 weeks old yesterday, a red haired boy, yes another one!
We are having much joy and fun with him.

Thanks so much for continuing your posts! Blessings, and hugs!
    Annie
