Hello my dears...How are you all?
Here we are beginning another new week that the Lord has blessed us with..
I had wanted to start this week with something a bit creative but our hydro was off ALL day..
Terry had to go away so I went with him ... grin..
Alas... I did not accomplish a whole lot..
Tonight I was making supper and did up a salad..
(we are trying to eat more of them) Must be January.. grin..
Anyway, I made a INFUSED OIL that I have been using for years and thought perhaps you might like the recipe..
Lemon Oil...
Place in a small pot with 1 cup of olive or canola oil..
Place on your lowest heat and infuse until it just begins to simmer..
Turn off and cool.. Store in a jar..
A mason jar is great..
I just keep this on my counter ..
The recipe says it will keep for a month but I find it never lasts that long..
Great over fish, salad and such..
For salad...
I just pour a bit over and add a squeeze of lemon juice and some fresh herbs ..
I find that you only need a few veggies for a simple salad...
Lettuce, onion, mushrooms and cucumbers for tonight..
Tomatoes are so expensive right now..
I used fresh rosemary from my window sill..
If you have a good dressing it makes all the difference..
As one of my friends once told me ...
Only 3 veggies in that salad and I could lick the plate..
It must have been a good dressing.. grin..
Well, dear ladies that is all for tonight..
It has been a bit of a day if you know what I mean..
I think I shall make a nice cup of tea...
Oh... for a nice cookie or square.. grin...

ReplyDeleteThis I will do, this week! Your salad looks so good! You made me hungry. Cucumbers, good ones are not to be found around here right now. They are available, but the flavor isn't very desirable. Tomatoes are out of reason, those will have to wait for me too! I hope you have a great week!

I agree about the tomatoes and the cucumbers, right now they are out of season.
ReplyDeleteThey don't taste very good either. Sometimes we just have lettuce, onions and
mushrooms, broccoli and a good dressing. We like raspberry vinaigrette.

I just found your blog and have enjoyed reading your posts. The salad looks very light and refreshing. I love using fresh lemons in food so I'm sure this would be good. I also enjoyed seeing your Bible collection and the unique way that you displayed them. Have a wonderful week.------- Shannon

ReplyDeleteWell your infused oil sounds easy enough that I can make that. I probably would be the only one to use it though because my husband is a 'plain' kind of eater...he likes the traditional 'french' dressing. I like to try new things on my salads.

ReplyDeleteThanks so much for the info on how to make infused oils, I have heard of it, but had no idea how to make it.
It's not nice when you lose your hydro, if that happened here at this time, we would all freeze to death, it was -24 when we got up this morning, I think our Winter weather has arrived!
Mmmm...a nice cup of tea does sound nice and prayer is always a wonderfully satisfying way to spend some time.
