Another Jelly Recipe

Hello all...
Another weekend is almost over.  Summer will soon be upon us and Spring will be gone for another year.  Time is flying by..
I had said that I would show you the Dandelion Jelly that I made the other day.. I think I had a jelly week... smile..
I had made this last year and it was a big hit..
So I thought I best make a few more batches..
The recipe I used this year is almost the same as the Apple Blossom one... I just changed the flowers  to the Dandelions...
Here is the recipe though just in case you want it..
Ours are almost gone although I think  you could find enough for a batch if you wanted to..
Dandelion Jelly..
Gather 4 heaping cups of blossoms..

With your scissors cut off the petals ...

Cover these petals with 4 cups of boiling water and let it sit overnight... This is the tea..
Strain this through a sieve and coffee filter to measure 4 cups..
Add boiling water up to 1/2 cup to measure the full amount.
Place it and 8 cups of sugar in a large pot and add 1/2 cup of lemon juice... Stir well..
Bring to a full rolling boil and boil for a couple of minutes.
Add 2 packages of liquid certo and boil for another couple of minutes..
Bottle and Seal..
This jelly tastes a lot like honey..
There are lots of recipes on the web but I find this one gels every time...
I do not like the powdered pectin... Sometimes it does not work..

  5. I tried making it with the Pomona Pectin, which uses less sugar. I think that may be why we didn't care for it. I do like how pretty yours looks.
